sandwich: Jeff's way



As much as we like many of the same foods, sometimes Jeff and I crave totally different things for lunch.  I am the veggie lover, and sometimes he wants meat.  Even though our sandwiches were completely different, we made them together and cooked our onions together too.  The onions were actually Jeff's idea.  I love being able to bounce cooking ideas around with him, and he's been great about at least trying my random gastronomic experiments.   Here's Jeff's easy lunch.  Yes, his does need a bit of heat, but still won't heat up your whole house.




Jeff is all about simplicity.  Less ingredients, but flavored just the way he wants.  This is easy and made our kitchen smell fantastic.

sandwich: Jeff's way
simple but delicious chicken sandwich
Ingredients
  • 1 ciabatta roll
  • 1/2 yellow onion
  • 1 chicken breast
  • 3-4 tbsp Italian dressing
  • 1/4 tsp salt
  • 1 tsp olive oil
Instructions
1. In a small pan, cook the onion with the salt and olive oil on medium for a few minutes, then reduce heat and cook low and slow until soft, sweet, and golden.2. In a separate small pan cook your chicken breast (I sliced mine into 3 pieces) in Italian dressing. Cook on medium until cooked through. Place the chicken on the ciabatta bottom and pour any remaining dressing from the pan over the chicken.Top with the onions and ciabatta top.

With hot weather, sometimes you want an easy lunch that won't heat up your whole kitchen.  You really can't go wrong with a sandwich.  This is my way, lots of veggies and crunch.



This is quick, easy, and so good.

the perfect veggie sandwich for summer
Ingredients
  • 1 sandwich roll ciabatta
  • 1/3 yellow onion
  • 1 tsp olive oil
  • a small handful lettuce
  • 1/2 red bell pepper
  • 4 thick slices cucumber
  • 2 tbsp hummus
  • 1/4 tsp salt
Instructions
1. Slice the onion and cook it in a pan in the olive oil over medium heat. Sprinkle with salt. After several minutes turn the heat to low and cook until soft and golden. They should be sweet.2. Assemble your sandwich. Hummus on the bottom, then your veggies, with the onions on the top. Enjoy! My ciabatta was small enough that I had a little salad with it.

peanut butter sandwich



No, this post is not really a "how to" on making peanut butter sandwiches, although Liam can show you how.  Liam just turned three years old.  He is fiercely independent, and wants to at least try to do everything on his own.  While I generally applaud this when it involves small things, like throwing his own trash away, it makes me nervous when he wants to help me cut meat and he tries to grab a large very sharp knife.  Yikes!  He was taught from the start not to touch the stove dials, get too close to the oven, etc., but I wanted to start him early on things he CAN do to help in the kitchen.  He loves knowing that he's helping, and he loves to try new things.  Plus, I really want him to go off to college eventually and not be that guy who can only make toast.  Lately he wants to make his beloved peanut butter sandwiches solo.  Jeff got this on video and you don't have to watch the whole thing (it is about 4 minutes), and usually Liam is much more to the point, but he turns into a spazzy ham when he sees a camera.  Anyway, it is pretty cute, and every time he licks the peanut butter I can't help but giggle.  The actual point of this tangent anyway is to let your kids help you in the kitchen.  It's great having company, help, and knowing that they are learning new things, and eating new yummy things they can make themselves.
